Spaghetti and Leek

What you'll need:
- Spaghetti
- Leeks 2
- medium tomatoes 2
- One table spoon tomato puree
- prawns (optional)
- Turmeric (optional)
- Seasoning cube
- Crushed chilli pepper- sprinkle
- 20ml vegetable oil (4 tablespoons)
Instructions.
- Wash and cut the Leeks in circles or rings
- Chop tomatoes into small cubes
- Cook the spaghetti in a separate pot and turn off the heat when nearly soft, then add some olive oil to prevent it sticking
- Pour the vegetable oil into a large sauce pan
- Add the leeks and stir gently
- Add half teaspoon of turmeric but this is optional
- Add the fresh and puree tomatoes and stir in, allow the vegetables to cook tenderly on low heat. This should only be for about 2- 3 minutes. Add a little amount of water to form a thick sauce.
- Add salt to taste, sprinkle in crushed chilli pepper
- If using prawns, add into the saucepan at this stage and stir. Allow to cook for about 2 minutes.
- Stir in the spaghetti and mix well. Cook for another minute 2 minutes and ensure the sauces are blended in and well mixed.
How to store
Store the left over in a pyrex bowl and keep in the fridge. Consume within 48 hours.
